Nama (生) means "raw" or "fresh" in Japanese, and it refers to "unpasteurized" sake. While most sakes that hit US shores have been pasteurized twice (once at filtering, and then again at bottling), "Namazake" is either only pasteurized once, or not at all. While these sakes are more difficult to transport (because they must be kept at a constant cold temperature), they also taste lively with fresher and fruitier flavors and aromas – in a way that normal sakes do not. We only get limited amounts of these sakes every year (mostly in the spring), and we’re thrilled to have a special night featuring the best we could get our hands on! Representatives from Kome Collective, Sake Tengoku, and Mutual Trading Co will be here to answer your questions. Sample 14 Namazake with light snacks that show the versatility of sake pairing for only $35. We look forward to seeing you! Kanpai!
