THE BEAUTY OF THE BLEND

Sean Capiaux founded Capiaux Cellars in 1994, after a notable career at prominent wineries around the world including Jordan, Pine Ridge, and Peter Michael in California; Macari, Jamesport and Schneider in Long Island, NY; and Houghton's in Australia. Capiaux Cellars focuses on Pinot Noir, with several single-vineyard bottlings that highlight all the variables and nuances that each different site produces. Sean’s winemaking style is a blend of classic and contemporary; cutting edge equipment and meticulous processes are paired with hands-on and minimalistic winemaking techniques. His philosophy is to produce wines that express the unique terroir from which they came. The fruit and the dirt lead the way. In short, his goal is to make honest wines.

While Capiaux Cellars focuses on single-vineyard bottlings, his Chimera is a blend of different vineyards. The label shows the Chimera from Greek mythology, a three-headed monster, because when Sean first made this wine, his original blend used three vineyard sites. However, the 2019 Capiaux Pinot Noir Chimera now has a blend of six vineyards including some outstanding Russian River fruit. Erin Brooks of Robert Parker's Wine Advocate awarded it 94 points and notes that the wine ‘is delicious this vintage and a great value.’ I could not agree more! 94 Points: “The 2019 Pinot Noir Chimera Vineyard, Capiaux's largest-production bottling, is delicious this vintage and a great value. Medium ruby, it's intensely scented of raspberry liqueur, blood orange, licorice, iron and earth. The full-bodied palate is plush, silky and open with generous, spicy fruits and a very long finish. It was aged 11 months in 10% new French oak. Drink dates 2021-2028.” – Erin Brooks, Robert Parker’s Wine Advocate (June 2021)

FROM THE WINERY
Chimera is one of my earliest wines, the name taken from Greek mythology... "a monster comprised of three different animals" as is depicted on the label. Originally blended from three vineyards back in 2001, I now have access to several excellent Russian River vineyard sources that boost its quality and value.

Tasting Notes:
Medium dark red to purple in color with a vibrant purple hue leads into perfumed aromas of dark berries, crème cherry and raspberry with a light vanilla oak note. Nicely integrated with red cherry fruit, pomegranate, and strawberry preserve. Chimera has a medium weight and tannins with a silky texture and a candied fruit finish.

UPDATED CURBSIDE PICKUP INSTRUCTIONS (JUNE 2021):

1. Place your online order. You will receive several emails. The first will acknowledge receipt of your order, another will let you know that your order is ready for pickup, and there will also be a separate email with instructions to schedule a curbside pickup date and time.

2. When replying to schedule your curbside pickup date and time, please
– give us at least two hours prior to your arrival
– let us know if you have multiple orders to consolidate so that we can make sure all your orders are ready

We will prepare your order(s), move them to the front of the store and send you a confirmation email that curbside pickup is ready. IMPORTANT! Due to space constraints, orders will only be held in the front of the store for curbside pickup for 24 hours. After 24 hours, they will be moved back to Will Call by the Customer Service Desk inside the store.

3. When picking up, pull up in front of the store. There is no need to call when you arrive at the store – just roll down your passenger window and let us know the name on the order(s). We will put your order(s) in your vehicle. There is no need to step out of your vehicle.
